Sizzling Simplicity: Stove-Cooked Fruity Soda Bread for Cosy Winter Days

A Warm Embrace of Tradition and Convenience

This recipe is adapted from traditional fruit soda bread and uses coconut oil and soya milk (oat milk would also work well). These fruity treats are perfect when you want something sweet but have no oven, or like me; you have the stove on, so feel you need to use it. I regularly cook these in the winter on our multifuel stove, and they are a perfect companion to a cup of tea and a good book on a chilly winter's day.  

This recipe is perfect for when you have limited cooking equipment. It is forgiving, and your measurements do not need to be exact. If you don’t have a measuring cup, you can use a standard cup, as the ratios just need to stay the same.

Preparation time: 5 mins

Cooking time: 15 minutes approx.

Vegan 

Utensils - A mixing bowl, fork, spatula, skillet or heavy-based pan (20cm min), spatula, weighing scales or a cup.


Fruit soda bread  ingredients
2 3/4 cup (340g) of plain flour (plus extra for dusting)
1 tsp salt  
1 tsp bicarbonate of soda  
3/4 cup (150g) sultanas or similar dried fruits
1 tbsp coconut oil  
1 cup (½ pint) soya or oat milk   
3 tbsp granulated sugar  

Method

Fruity soda bread

  1. Mix the salt, bicarbonate of soda and salt in a bowl.   

  2. Add the sultanas to the bowl and mix until the sultanas are all covered in flour.  

  3. Next, rub the coconut oil into the flour.    

  4. Then, make a well in the centre of the flour, add half of the milk, and mix. Continue adding the milk until you have a soft dough that is not too wet (you may not need all the milk).   

  5. Generously flour the skillet or pan. Place the dough inside and mould it into a circle approximately 20cm wide by 2 cm deep.   

  6. Generously flour the top of the dough and cut into quarters.   

  7. Carefully place the pan on the stove or hob and cook on medium heat for approximately 10 minutes or until golden brown.   

  8. Carefully turn each piece over and cook for a further 5 minutes.   

  9. Finish off by cooking each edge for a minute, and when cooked through, leave it to cool.    

  10. Enjoy them while warm with butter and jam and, of course, a cup of tea.
